Aunt Patty’s “Flitters” (aka Dumplings)

The noodle that got me interested in food and pasta. Growing up in Evansville, IN and attending the annual Westside Nut Club Fall Festival I would get the chicken and dumplings from the Ressurection booth. My Aunt Patty, who taught me how to cook… she and I bonded over these dumplings and we would go on and on about who had the best dried dumplings or “flitters” is what they called them, that you could take home and make your own version. They’re paper thin and slick. When boiled in the stock the chicken fat just grabs onto them giving them a really wonderful mouthfeel. It’s 100% the most perfect comfort food for me and I’m overjoyed to be able to share them with y’all.
