You might have had the best noodle dish ever at TKO. This chili noodle is what they use. It’s made from 3 types of dried chilies, that are pulverized, sifted, then cut into semolina and extruded. They have the most beautiful color with little specks of chilies in them. They hold the color through cooking and the heat level is at about a medium. It kind of sneaks up on you, but isn’t overwhelmingly hot. It’s pretty much perfect. Try it in a stir-fry, add a little sichaun peppercorns for some tongue numbing Dan-Dan noodles, or maybe even a bucatini all’amatriciana with a little extra heat.
Cut off for Saturday delivery is Friday at 8am. Cut off for Wednesday delivery is Tuesday at 8am.
